I found somewhere a 1950 Pennsylvania State Grange Cookbook and the recipes are often a hoot, from odd ingredients to instructions like “put in hot oven.” Here’s a fun one for a Friday of a holiday weekend:
1/2 cup butter, 1 cup cake flour, 2 tablespoons confectioners sugar. Cream all ingredients thoroughly and spread evenly in a greased 8x8x2 pan. Bake in moderate oven (350°) 30 minutes.
2 eggs, 1¼ cups brown sugar, 2 tablespoons flour, ¼teaspoon salt, 1½ teaspoons baking powder, 1 cup nuts, 1 cup cocoanut.*
Beat eggs until thick and lemon colored. Add sifted dry ingredients, then nut meats and cocoanut. Spread evenly on first mixture. Bake in moderate oven an additional 30 minutes. Cool in pan and cut in squares.
