With the picnic-friendly holiday like Memorial Day, here is a recipe that I found in a Let’s Eat Outdoors pamphlet (from the late 1950s/early 1960s — I think). The recipes are from a range of food companies but, of course, I couldn’t resist the Spam recipes. So how about some Spam-aroni!
SPAM-ARONI PICNIC SALAD
Combine 3 cups chilled cooked macaroni, 1 can Spam, cubed, 1/2 lb. American or Cheddar cheese, cubed, 1 cup chopped celery, 2 tbsp. minced onion. Toss together with dairy sour cream. 6 to 8 servings.

THE ACCIDENTAL COWBOY is out in the wide world today 😆 This story of a Cowboy in a Kilt taking orders from a former junior champion bronc rider caused me seemingly no end to troubles while I was writing it but now…oh, my, I’m so happy with the humor and the four-legged sidekicks.

The Convenient Cowboy is on sale now and tells the story of attorney Spencer MacCormack, brother of surgeon Payson featured in Book #1 The Surgeon and The Cowgirl. For Spence, getting for custody of his son is all he wants, which is why he’s willing to enter into a modern marriage of convenience with Olympia James. This cowgirl, who is focused on becoming a first-time barrel racer, agrees to the arrangement to get the money for her sister’s tuition. What neither of them expected was their one-night stand months ago (at Payson’s wedding) would result in a baby. Now the marriage might be more real than either expected or wanted.
